Montsià Rice with Mireia Carbó brings you this delicious rice with artichokes and anchovies, an easy to prepare and seasonal recipe.


Ingredients

  • 400 g of Montsià Bomba Rice
  • 6 artichokes
  • 8 anchovies
  • 750 ml artichoke broth (approx.)
  • 500 ml fish broth
  • 5 ripe tomatoes
  • 1 green pepper
  • ½ red pepper
  • 1 tablespoon spicy red peppers
  • 5 garlic cloves
  • olive oil
  • salt

  1. Clean the fish, headless and boneless.
  2. Inside a low saucepan, prepare the sauce with the minced garlic and a generous splash of olive oil. When trying to take color add the small chopped peppers.
  3. We will add the spicy red peppers and then the grated tomatoes. Cook, until they are like a jam.
  4. Clean the artichokes and with the leftover leaves and the trunks we will make a broth.
  5. Add the cut artichokes to the saucepan and then the rice.
  6. Add the boiling broth and artichoke broth and cook for 15-18 minutes. Taste and add salt.
  7. Meanwhile, wash the anchovies under cold water tap in order to remove scales.
  8. When there are 2 minutes left, add the anchovies to the surface of the rice and cover the casserole. Serve fresh.
