Today we give you a perfect Delta Poké Bowl to start September

After the summer holidays, we like to take care of ourselves with recipes prepared with more vegetables and grilled protein.
This #poké prepared with Montsià Bomba Rice is ideal for combining your favourite vegetables with a chicken breast, all cooked with extra virgin olive oil and lemon juice.

Ingredients

  • 200 g Montsià Bomba Rice
  • 1 chicken breast
  • 5-6 florets of broccoli
  • 1/2 small zucchini
  • 150 g green beans
  • Extra virgin olive oil
  • Lemon juice
  • Salt
  • 1 teaspoon of light mustard
  • 1 tablespoon of soy sauce

  1. Steam the green beans and broccoli al dente with a pinch of salt. Cool and reserve.
  2. Cut the zucchini into cubes and set them aside.
  3. Cook the Montsià Bomba Rice the time indicated by the manufacturer. Drain and cool.
  4. Cook the chicken breast in a frying pan with oil and salt until it is well browned and juicy inside. Sprinkle with lemon juice, turn and reserve. In the same pan, sauté the steamed vegetables separately and add a few drops of lemon juice.
  5. Sauté and brown the zucchini and proceed in the same way.
  6. To assemble the Delta Poké Bowl: place the bomba rice at the bottom of the bowl and place the laminated chicken breast, broccoli, sautéed green beans in an orderly on top and the courgette cubes in the centre.
  7. Emulsify the ingredients of the vinaigrette to go with the Poké.
