Do you want to give an exotic touch to your Christmas? Jollof rice is the perfect recipe to get into the traditional African cuisine, especially from western Africa.

Ingredients

  • 400 g Montsià Basmati Rice
  • 1 onion
  • 2 red tomatoes
  • 1 yellow pepper
  • 1 green pepper
  • 1 red pepper
  • 170 g tomato concentrate
  • 2 bananas
  • Thyme
  • Cinnamon
  • Turmeric
  • Ginger
  • Chilli pepper
  • 3 Chicken breasts
  • 350 ml chicken broth
  • Water
  • Oil
  • Black pepper
  • Salt

  1. First chop the onion and peppers and sauté them in a pan with a little oil.
  2. When the vegetables are brown, add the tomatoes cut into pieces, salt and sauté for a 3 minutes.
  3. Add the diced chicken and rice with the spices, chilli and tomato to mix for a few minutes.
  4. Add the chicken broth and let it cook for about 20 minutes.
  5. We cut the banana, we add it in oil over medium heat and fry it for 2 minutes.
  6. Serve the skewers with the chicken, fried banana and vegetables.
