Ingredients

  • 300 g Montsià Bomba rice
  • ½ rabbit
  • 75 g sobrassada
  • 1 onion
  • 1 garlic
  • 1 carrot
  • 1 teaspoon of ñora (black pepper) pulp
  • 1 small glass of brandy or rancio wine
  • 1200 ml chicken or beef broth
  • Olive oil
  • Salt

  1. Season the rabbit cut into pieces on both sides with salt and pepper.
  2. Add a little olive oil in a large casserole and fry the meat.
  3. While the meat is cooking on the fire, add the chopped onion and garlic. We also add the carrot cut in very small pieces.
  4. When the sofrito is well cooked, like a jam, add the ñora pulp. We give it a turn, add the alcohol and let it evaporate.
  5. When the alcohol has finished evaporating, we add the sobrasada and a little bit of broth, slowly until 18 minutes of cooking. We cannot forget to add a touch of pepper!
  6. When the minutes of cooking are over, serve it quickly and it will be ready to eat.
