Croquettes are one of the most traditional dishes that we have in our gastronomy. There is a wide variety of croquettes, but have you tried the rice and cheese ones?? Today we bring you this recipe that you will love!

Ingredients

  • 500 g of Montsià Bomba Rice
  • half an onion
  • 25 g of butter
  • a drizzle of olive oil
  • 100 g of diced mozzarella
  • 100 g of grated cheese
  • salt
  • nutmeg
  • pepper
  • 2 beaten eggs
  • breadcrumbs
  • oil to fry

Instructions

  1. First of all, In a large frying pan, fry the chopped onion in oil and cook over low heat so that it cooks slowly..
  2. Once the onion is tender, add the rice and sauté it 1 minute.
  3. Then we cover the pan with water, salt and pepper and cook the rice for a few 18 minutes to be on point.
  4. Below, we remove the rice from the heat, add the butter, the nutmeg and the grated cheese and then let it cool to room temperature.
  5. When the filling is already cooled, we form the croquettes. In the center of each croquette we will put a piece of mozzarella and bathe it all with the batter, formed with flour, beaten egg and breadcrumbs.
  6. We leave the dough of the croquettes cold so that they are compacted.
  7. Finally, fry the croquettes in hot oil and serve them right away so that the cheese is melted inside.
