Rice, chickpeas, hard-boiled quail egg & lime vinaigrette Delta Poke Rice Bowl is high in folates (vitamin B9 (folic acid), thanks to the chickpeas, spinach, eggs and honey. Folates contribute to the growth of maternal tissues during pregnancy and the normal formation of blood cells.

In addition, the recipe is also a source of vitamin E and is high in vitamin D. Vitamin D contributes to the normal maintenance of bones and teeth.

  • 200 g of Montsià Bomba Rice
  • 200 g of cooked chickpeas
  • 4 spring onions
  • 8 quail eggs
  • 100 g of fresh spinach
  • 2 cloves of garlic
  • 1 pinch of curry
  • extra virgin olive oil
  • salt
  • 1 lime
  • 4 soy sauce spoons
  • 2 honey spoons
  • Thyme

  1. Cook Montsià Bomba Rice with plenty of water and a little salt for 15-16 minutes. Drain, cool and reserve.
  2. Boil quail eggs covered with water for 5 minutes. Cool, peel and reserve.
  3. Peel and cut garlic into thin slices. Heat a little olive oil and cook the garlic until they try to take color, then we will raise the heat and sauté the spinach.
  4. Sauté the chickpeas with a drizzle of olive oil, a pinch of salt and curry.
  5. For the sauce we will mix the juice and the grated lemon peel with honey, soy, olive oil and chopped thyme.
  6. To assemble the Delta Poke Bowl: At the bottom of the bowl, we will place rice and on top we will harmoniously arrange the previous preparations.
