This summer enjoys original and balanced dishes. Break the routine with this delicious rice, rocket, hard boiled egg, avocado & yogurt sauce and sesame Delta Poke Bowl.
Ingredients
300 g of Montsià Bomba Rice
4 hard-boiled eggs
2 avocados
100 g of cherry tomatoes
fresh or dried basil
extra virgin olive oil
salt
1 natural yoghurt
1 tablespoon of tahini

Instructions
Cook the Montsià Rice with plenty of water and a pinch of salt for about 15-16 minutes. Drain, cool and set aside.
Boil the eggs for 10 minutes. Cool, peel and set aside.
Wash the tomatoes and cut them in half.
Peel an avocado, grate it and slice it.
Reduce the marinade in a small saucepan over low heat.
For the sauce, mix the yoghurt with the tahini, a drizzle of olive oil and a pinch of salt.
To assemble the Delta Poke Bowl: Place the rice in the bottom of the bowl and arrange the previous preparations in a harmonious way.
