Here is the spring vegetables rice recipe, one of the most delicious and easy to prepare Peruvian meals.

Ingredients

  • 400 g. Montsià Extra Rice
  • 1 onion
  • sweet corn
  • 150 g. peas
  • 1 tomato
  • 1 carrot
  • 1 tablespoon of saffron
  • 1 garlic
  • vegetable broth
  • 1 yellow pepper
  • 1l. water
  • oil
  • salt
  • pepper

  1. EIn a pot we put the water to heat and add the vegetable broth. When it boils we turn off the fire and set aside .
  2. Add a little oil and fry the onion, garlic, tomato and pepper for three minutes. Then add the rice without the broth and fry another minute.
  3. Add two tablespoons of natural tomato, the vegetable stock and a little ground saffron. We cook the rice over medium heat for 15 minutes.
  4. After ten minutes of cooking, add the peas. We wait for 5 more minutes of cooking.
  5. Turn off the heat, now add the three tablespoons of corn, and cover the pot or container with a lid. Let it stand 5 minutes.
