Today our chef brings us another super nutritious recipe, full of contrasts and textures. This is the Delta Poké Bowl, combining a base of Montsià long rice, a breaded chicken breast accompanied by mango, sweet corn and cucumber. To finish it off we will prepare a smooth avocado mayonnaise delicious.


  • 200g long rice
  • 1 chicken breast
  • 1 egg
  • sweet corn
  • cucumber
  • 1 mango
  • pickled onion
  • bread crumbs
  • flour
  • 3 tablespoons mayonnaise
  • 1 tablespoon mild mustard
  • 1/2 avocado
  • oil
  • salt

  1.  We cook the rice with water and a little salt for 15-17 minutes. Let the rice stand for 3 minutes, cool and set aside.
  2.  To bread the chicken breast, add a little salt, coat in flour, beaten egg and breadcrumbs.
  3.  Fry the chicken breast in plenty of hot oil until golden brown and crispy. Drain the excess oil on kitchen paper.
  4.  Dice the mango, slice the cucumber and drain the corn in oil.
  5.  To assemble the Delta Poké Bowl: place the rice at the bottom of the bowl and arrange the diced mango, cucumber in the form of rolls, corn, sliced crispy chicken and finally the pickled onion in an orderly manner.
  6. To prepare the sauce, mash the avocado with a blender, add the mayonnaise and mustard and emulsify it, which will serve to accompany the poké.
