We open autumn with a very easy and tasty recipe: rice with chanterelles.

  1. First of all, clean the chanterelles well. Keep in mind that they are not washed with water because they lose part of their flavor, like all mushrooms.
  2. Remove dirt with a knife, a rag and a small brush.
  3. Prepare a broth in a pot or casserole, sautéing in olive oil 3 garlic cloves and a little onion. When the onion is golden, sauté the logs of the chanterelles, add the bay leaf, Add about a liter of water and let the broth cook over low heat.
  4. In a wide-bottomed container, brown the rest of the onion, a quarter of the chanterelles (very finely chopped) and add the crushed tomato and wine. Sauté for about five minutes. We incorporate the rice, sauté it and add the broth that we have prepared.
  5. Meanwhile, Laminate the remaining chanterelles and sauté them in the pan with a little minced garlic, without just being done.
  6. When there are a few minutes until the rice is ready, we incorporate them.
  7. Once the rice is done, we let it rest for a few minutes and serve.
