Montsià Rice with Mireia Carbó brings you this delicious rice with rib, chicken and shiitakes.

Ingredients

  • 400 g of Montsià Bomba Rice
  • 500 g pork rib
  • 1 chicken breast
  • 8 dried shiitakes
  • 1800 ml meat or chicken broth
  • 1 onion
  • 1 green pepper
  • 2 cloves of garlic
  • 1 carrot
  • 2 ripe tomatoes
  • olive oil
  • salt and pepper

  1. First, put the mushrooms to soak.
  2. Season the rib and brown it in a large saucepan with a generous splash of olive oil.
  3. Cut the pepper, onion, carrot and garlic into small cubes and sauté in a saucepan, first adding the onion and garlic and a few minutes later the pepper and carrot.
  4. When everything is well cooked add the grated tomatoes and cook for a few more minutes.
  5. Cut the chicken into cubes. Add the seasoned chicken and brown it with the sauce. Add the sliced mushrooms and reserve the soaking water.
  6. Add the broth to the saucepan along with the water that has been used to soak the mushrooms and let it heat up and boil for about 5 minutes.
  7. Pour all the sauce with the rib, chicken and mushrooms to a frying pan.
  8. Add the rice and cook for about 18 minutes.
  9. Season with salt and pepper. Let stand 5 minutes and serve.
