  • 250 g of Integral Montsià Rice
  • 2 medium carrots
  • 25 g of butter
  • 100 g of green beans
  • 100 g of frozen peas
  • 2 artichokes
  • 1 red pepper
  • 1 large onion
  • 8 mushrooms
  • cauliflower sprigs

  1. Peel and cut the onion into small cubes first, then heat the olive oil in a frying pan and add the chopped onion to sauté until it starts to show through.
  2. Add the rice and salt and cook for about two minutes. Meanwhile, chop the fresh mint and add all the spices to the pan, as well as peas. Then, pour some 400 ml of water and stir for a few 4 minutes.
  3. Below, cut the stems of the artichokes and the top. You must calculate the necessary place to incorporate the rice.
  4. Remove the center of the artichokes, chop it and add it to the rice mixture. Then, remove this water, save it and fill each artichoke with the rice.
  5. Place the artichokes in a pot and pour the cooking water from the rice that you had reserved until covering about three or four fingers of the artichokes and simmer for between 40 and 50 minutes.
