Today we travel to Portugal! From Montsià rice we teach you how to prepare one of the most well-known dishes of our neighboring country: cabidela rice. This is a very complete dish made with rice, chicken and strained tomatoes.

Ingredients

  • 500 g Montsià Extra rice
  • 1 chopped chicken
  • 2 onions
  • 1 clove of garlic
  • 5 tablespoons olive oil
  • water
  • 1 handful of parsley
  • 1 sprig of thyme
  • 2 bay leaves
  • 3 tablespoons strained tomatoes
  • 1/2 cup vinegar
  • salt
  • ground black pepper

  1. Peel and chop the onions, parsley and thyme sprig.
  2. In a clay pot with olive oil, add the chopped chicken, onion, garlic clove, peeled and crushed, parsley, bay leaves, thyme and salt everything. Let it cook with the pan covered, adding a little mineral water, for 30 minutes.
  3. When it starts to boil, add the rice, let it cook, over low heat, for 17 minutes.
  4. Add the vinegar and the 3 tablespoons of strained tomatoes, stirring well.
  5. When the boil starts again, remove the pan from the heat and let it rest, covered, for a couple of minutes.
