Full belly, happy heart! Today we show you the recipe prepared by the winners of the Valentine’s show cooking on February 12th. Learn how to cook a complete and delicious dish that will make anyone fall in love: Risotto of cockles with cava

Ingredients

  • 420 g Montsià Bomba rice
  • 1.5 fish broth
  • 600 g fresh cockles
  • 60 g grated parmesan
  • 4 shallots
  • 1 medium Figueras onion
  • 100 g creamy butter
  • ½ leek
  • fresh parsley
  • 2 glasses of cava brut

Instructions

 
  1. First open the steamed cockles. Remove shells and reserve it.
  2. Strain the juice and reserve it as well.
  3. Cut the leek and shallot into small cubes for the sauce.
  4. Then fry the leek and shallots in a saucepan with the oil and butter until the ingredients are golden brown.
  5. Add the rice and let it brown a little. Remove it to does not catch.
  6. Add 2 glasses of cava and when it evaporates, add the cockles juice. Season with salt and pepper.
  7. Little by little, add the stock and stir the rice while it cooks for about 15 minutes.
  8. Go testing before adding broth until it is ready.
  9. Garnish with grated cheese, cockles and parsley.
  10. Serve hot at the moment.
