420 g Montsià Bomba rice
1.5 fish broth
600 g fresh cockles
60 g grated parmesan
1 medium Figueras onion
100 g creamy butter
2 glasses of cava brut
First open the steamed cockles. Remove shells and reserve it.

Cut the leek and shallot into small cubes for the sauce.
Then fry the leek and shallots in a saucepan with the oil and butter until the ingredients are golden brown.
