Ingredients
200g of Montsià Brown Rice
150g of cooked chickpeas
1 avocado
8 cherry tomatoes
1/2 zucchini
1 boiled egg
100g of edamame
Grated ginger
Olive oil
1 teaspoon of soy sauce
1 teaspoon of Yuzu sauce or lemon juice
Black sesame
Fresh mint leaves

Instructions
Cook the Montsià brown rice, with plenty of water and a little salt, for about 15-16 minutes. Drain, cool and set aside.
Cut the cherry tomatoes in half and cook the edamame for 1 minute. Peel these ingredients and cool.
Slice the zucchini, dice the avocado and cook the egg for 10 minutes.
To assemble the Delta Poke Bowl: place the brown rice at the bottom of the bowl and arrange the chickpeas, avocado, tomatoes and edamame on top.
Distribute the zucchini rolls, and the boiled egg and decorate the bowl with fresh mint and black sesame.
