Koshari is one of the most traditional recipes in Egypt. Consists of a perfect union made from rice, chickpeas, macaroni and lentils.

Koshari is a very cheap vegan dish due to its ingredients. To those that we have already mentioned, onions, spicy tomato sauce and seasoned with spices such as coriander or cumin are added.

We have opted for a long rice to make a lighter dish, but you can cook it with any variety of rice.


  • 200 g of Montsià Long Rice
  • 180 g of macaroni
  • 450 g of chickpeas
  • 80 g of lentils
  • 2 onions
  • 3 garlic
  • 4 tomatoes
  • 2 tablespoons of baharat
  • 1 chilli
  • fried onion
  • sweet paprika
  • 1 tablespoon of vinegar
  • salt
  • olive oil

  1. Peel and cut the onion and garlic very finely. Sauté the garlic and onion with a little oil and add grated tomatoes to make a sauce.
  2. Add the baharat, paprika, salt and a splash of vinegar.
  3. Cook the macaroni for about 7 minutes.
  4. Cook the Montsià Bomba Rice for about 17 minutes. Also cook the chickpeas and lentils or you can buy the legumes already cooked.
  5. Add the rice, macaroni and legumes to the sauce and stir well.
  6. Remove from heat and serve it with a little fried onion on top.
