Kheer, also called Payasam or Payesh, It is a traditional sweet rice pudding from the Indian area.

Ingredients

  • 100 g of Montsià Basmati Rice
  • 1 l of milk
  • 100 g of sugar
  • 50 g of raw almonds
  • 50 g of peeled pistachios
  • Vanilla ice cream
  • 1 Apple
  • 0.3 g of saffron
  • 50 g of anacardos

  1. We put the rice to soak for 2 hours and we wash it 3 times with cold water.
  2. Then, add the milk in a saucepan, the saffron, the almonds, the pistachios and cashews and infuse it at 60ºC for a few minutes.
  3. We drain the rice and add it to the saucepan with the milk to let it cook during 30 minutes over very low heat.
  4. We leave the rice to cool in the fridge and cut the apple into wedges.
  5. We remove the bowl from the fridge and serve it with a scoop of vanilla ice cream and the wedges.
