Today we fly to Peru! One of the most emblematic Peruvian dishes (Arroz chaufa) is Peruvian fried rice, a fusion recipe between Chinese and Peruvian cuisine. This is a fried rice that can be cooked with chicken, beef or sausages. 

The Chinese immigrants who arrived in Peru merged their recipes with others typical of the Latin American country. One of them is Peruvian fried rice. In fact, in Peru these dishes of Chinese origin are called chifa. 

Ingredients

  • 300 g Montsià Long Rice
  • 250 g chicken breast
  • 2 eggs
  • 1 fresh onion
  • 1 red pepper
  • 1 tablespoon grated ginger
  • 6 tablespoons soy sauce
  • 1 tablespoon chopped chives
  • 60 ml chicken broth
  • 60 ml olive oil extra virgin olive
  • pepper
  • 900 ml water

  1. Cook the rice in 900 ml of water for 15 minutes. When the cooking time has passed, turn off the heat and cover the container with a cloth. 
  2. Let stand 5 minutes and set aside. Meanwhile, beat the eggs and pour them to set. When we have the tortilla, we cut it into strips. 
  3. Then chop the fresh onion and peppers and fry in the same oil as the tortilla. Add the chicken pieces and brown the grated ginger. 
  4. When the chicken and pepper are fried, add them to the rice and add two tablespoons of soy sauce. 
  5. Fry all the ingredients for a couple of minutes, add the egg strips, and a couple of tablespoons of chicken broth. And it can be served!
