Today we show you how to prepare a delicious Delta Poké Bowl on a Montsià Bomba Rice base with spicy marinated salmon, chives, avocado, sautéed mushrooms and curried yogurt sauce with chopped chives.

  • 200 g of Montsià Bomba Rice
  • 1 avocado
  • 2 chives
  • 1 cayenne
  • 1 lemon
  • salt
  • pepper
  • 1 natural yogurt
  • 1 teaspoon of curry
  • 6 sprigs of fresh chives
  • 12 mushrooms
  • 500 g of loin of Salmon
  • Extra virgin olive oil

  1. Cook the Montsià Bomba Rice with water and a pinch of salt for about 15-16 minutes. Cool and set aside.
  2. To prepare the salmon: Clean the skin and salmon bones and cut it into cubes 2 cm long.
  3. Inside a bowl, chop the cayenne very small. Mix it with the grated lemon peel and its juice, a drizzle of olive oil and a pinch of salt and pepper. Mix with salmon and leave in the fridge at least 30 minutes.
  4. Then, clean and cut the mushrooms and cook it in a large skillet with a drizzle of oil and a pinch of salt.
  5. Clean the chives and heat them in the oven or grill until tender.
  6. For the yogurt sauce we will mix the yogurt with the curry, a pinch of salt and chives, finely chopped.
  7. To prepare Delta Poke Bowl: Place the rice at the bottom of the bowl and on top, harmoniously arrange the previous preparations. Drizzle with some of the yogurt sauce and serve.
