Arancini are a traditional Italian dish which can remind us of our croquettes. The main difference is that arancini are made with breadcrumbs and stuffed with rice and cheese, mainly mozzarella. It is an easy and delicious recipe!


  • 200 g Montsià Carnaroli rice
  • 70 g Butter
  • 100 ml White wine
  • 750 ml Vegetable or chicken broth
  • Saffron
  • Salt
  • Ground black pepper
  • 50 g Grated Parmesan cheese
  • 50 g Serrano ham
  • 50 g Mozzarella
  • Wheat flour
  • 1 egg
  • breadcrumbs

  1. Heat the butter in a frying pan , melt it and add the rice.
  2. We stir a couple of minutes to fry before adding the white wine . Cook over high heat until the alcohol evaporates.
  3. Add the saffron and the broth to the rice slowly and stir while it cooks over medium heat. In this way, we achieve the release of starch and the risotto creaminess.
  4. After 18-20 minutes, rice is ready. Remove from heat , add the remaining butter, grated Parmesan cheese, and season it.
  5. With your hands soaked in water , , remove part of the risotto and make some small balls. We introduce a little ham and cheese in the center and close them.
  6. We pass each rice ball through flour, beaten eggs and breadcrumbs.
  7. Fry in hot oil and cover the pot . We drain the excess oil and serve it.
